Tomato cucumber salad with Italian dressing

Try this simple vegetable salad for a taste of summer. This recipe includes three different dressing recipes.

Number of servings: 4
Serving size: 1/4 of prepared recipe


3 tomatoes, diced

1 cucumber, peeled and sliced

1/2 cup onion, finely chopped

1 bell pepper, diced

1 stalk celery, finely diced

Optional: 1/4 cup fresh parsley, chopped

1/2 cup bottled or homemade Italian salad dressing, low fat (see recipes on back)


Time needed: 20 minutes preparation

  1. Combine all ingredients for the salad.
  2. Mix all the ingredients for the dressing.
  3. When salad is mixed, place in the refrigerator and serve chilled.
  4. Refrigerate leftovers.
