Latin-Style Coleslaw

Give your standard coleslaw a tasty Latin-style makeover! Serve it as a side dish or use it as a filling for tacos, burritos, and more.

Ingredients

1 small green cabbage, very thinly sliced

2 carrots, grated

1 red onion, thinly diced

1/2 fresh green jalapeño pepper, minced

1/4 cup olive oil

1/4 cup apple cider vinegar

2 teaspoons dried oregano

Dash of salt

Dash of pepper

Directions

Time needed: 20 minutes preparation

  1. In a large bowl, mix green cabbage, carrots, red onion, and jalapeño pepper.
  2. In a small bowl, mix olive oil, vinegar, and oregano. Then combine with vegetable mix and mix thoroughly.
  3. Salt and pepper to taste.
  4. Let rest in the refrigerator for at least 15 minutes before serving.
