Mary Caskey is an associate program director for the Supplemental Nutrition Assistance Program — Education (SNAP-Ed). She oversees the staff in greater Minnesota who promote healthy lifestyles and help low-income Minnesotans make the best food choices to feed their families within a limited budget. Mary's work in Extension also focuses on providing trainings to school foodservice professionals to increase their nutrition knowledge base and to improve the nutritional quality of school meals served to Minnesota students. Mary has been with Extension since 1998 and has worked in the field of nutrition for over 30 years in a variety of programs targeting low-income audiences.
Mary earned a master's degree in Education from the University of Minnesota — Duluth and is a licensed dietitian.
