Jackie Billhymer began working with Extension’s Health and Nutrition programs in 2015 as the project coordinator for SNAP-Ed’s Community Partnership Funding Initiative. Currently, Jackie is one of two regional coordinators for the Expanded Food and Nutrition Education Program (EFNEP). She works with communities and partnering agencies in Ramsey and Dakota counties. With her counterpart, she supports EFNEP’s community nutrition educator team to connect the program’s nutrition classes with families in greatest need. Prior to joining Extension, Jackie worked in rural and urban areas of the U.S., collaborating with community organizers and teachers to engage youth in hands-on gardening and nutrition education.
Jackie is a registered dietitian and earned a master’s degree in Public Health-Nutrition from the University of Minnesota-Twin Cities.
