Introduction

This is one of four units in the Simply Good Eating nutrition education curriculum. The book and handouts use interactive activities to help participants learn how to plan healthy meals on a limited budget, stretch their food dollar, store foods appropriately, make meals from ingredients commonly found in the kitchen, and cook with an emphasis on safe food practices. The activities are highly adaptable to the needs and interests of a diverse range of participants. New in 2008, the book now includes two CDs with reproducible English and Spanish handouts. This curriculum complies with the 2005 Dietary Guidelines for Americans and MyPyramid and is recommended for EFNEP and FSNEP staff, other nutrition educators, and teachers.
