Salad burnet, Poterium sanguisorba, is a hardy perennial that grows to a mature height of 18 inches. It can be grown from seed or divisions. Seeds should be started indoors and transplanted to a permanent spot in the garden. Salad burnet has a cucumber flavor and aroma; it is delicious in a salad of mixed greens. Use the tender leaves from the center of the plant as the older outer leaves are bitter and tough. Unfortunately, rabbits love this plant, too, so try growing this herb in large pots. If the plant is left to flower, it will reseed.
