What We Do

For Meat Processors — The meat processor program is centered on adding value to the products that Minnesota meat processors offer in addition to practicality driven meat safety. Initiatives include:

  • the establishment of HACCP short courses throughout the state
  • value-added meat processor workshops
  • scientifically motivated publications dealing with adding value and safety to Minnesota meat products

For Livestock Producers — The livestock producer program focuses on:

  • targeted livestock marketing
  • maximizing value of Minnesota livestock used for meat
  • elucidating the meat processor issues directly related to the livestock producer
  • End Product Workshops (in development)

In addition to publications, future initiatives will address livestock producers in all common livestock species as well as food safety in the dairy industry.

For Consumers and Youth — Using practical applications, this program focuses on meat product processing and safety. Initiatives include:

  • consumer workshops
  • youth activities
  • youth meats evaluation activities addressing practical marketing strategies pertinent to red meat
  • programming and publications addressing food safety and practically-based meat quality issues related to the consumer
